Lentil project - legumes for a sufficient diet

Project objective

The aim of the project is to increase the consumption of pulses in out-of-home catering. To this end, legume recipes and advertising materials are being developed and tested in the kitchens in collaboration with 3 commercial kitchens. A long-term increase in demand is also intended to promote regional value chains. Involving regional producers will support the cultivation of lentils, chickpeas and other pulses. The results will subsequently be made available to other kitchens to increase the use of pulses.

Background

As a plant-based source of protein, pulses play an important role on the path to a sustainable food system. When cultivated, pulses contribute to biodiversity, soil fertility and a reduction in CO₂ emissions. Nutritionally, they offer high protein content, fiber, vitamins and minerals. The Planetary Health Diet recommends a legume consumption of 27 kg per capita per year; in Germany, only just under 2 kg per capita per year are currently consumed.

Project structure

The Linse project is divided into 4 work packages (see figure). The work of the University of Kassel is mainly in work package 2 - menu development involving regional value chains. This includes the research and mediation of regional producers, multi-actor focus groups + qualitative interviews as well as the recipe development of the legume dishes.
